Continue up to Morne Fortune viewpoint for a panoramic view of the Castries Harbor and Northern Landscape. Your journey continues through the Cul De Sacvalley to Marigot Bay viewpoint.  Located on the West coast of the island Marigot Bay is surrounded by steep, forested hills. An Historic landmark it has been the site of number of battles between the French and the British. Depart Marigot Bay for a drive through Banana plantations and along the island’s beautiful West coast. Drive through the fishing villages of Anse La Raye and Canaries before arriving the town of Soufriere home of the Majestic Pitons.   Here we will have the opportunity of volunteering with local nurses within the town of Soufriere for the morning.  Depart for a short drive to Morne Coubaril Estate, a sprawling plateau farm in the highlands of Soufriere. Producer of Cocoa, Coffee, Coconuts, Bananas and an assortment of other tropical produce, this working plantation has been in the business of cultivation since the 17th century and maintains some of the same harvesting and processing practices that have served it in good stead for hundreds of years.  Here you will be taken for a guided tour of the Estate. You are guided through a small village of replica stick huts similar to those used two centuries ago by local villagers. The gardens around offer close-up views of the more popular local flora. Your guide then leads you up the estate driveway to present our manioc house where you receive a close-up live demonstration of the process to make and bake cassava bread. The grandeur of the Monplaisir family’s estate house is next and offers great photo opportunities before you enjoy another live demonstration. You are explained the process of de-husking a coconut and drying the copra in our oven before having a taste of coconut water and jelly. After enjoying the bay view from the point, you have the opportunity to taste a ripe cocoa bean at the cocoa and coffee house before witnessing the process of fermentation, bean drying and the cocoa dance used to polish the dried beans. The tour climaxes with our mule-driven sugar cane mill and the more-ish taste of fresh cane juice. After your tour enjoy a delicious Creole buffet lunch and a cool refreshment before your return journey back to Castries and your ship.   Duration: 7 Hours
